2/3 | cup | orange juice | |

1 | cup | instant rice, uncooked | |
|
|||
1 | can | (11 oz.) Mandarin oranges, drained | |
|
|||
1 | can | (8 oz.) crushed pineapple | |
|
|||
1/2 | cup | cucumber, chopped | |
|
|||
1/3 | cup | red onion, chopped | |
|
|||
3 | tablespoons | fresh mint, chopped | |
|
Combine juice and water in medium saucepan. Bring to a boil. Stir in rice; remove from heat; let stand 10 minutes. Stir together rice, drained oranges, crushed pineapple, cucumber, onion and mint in serving bowl. Serve chilled.
