Chewy on the inside, crisp on the outside
Yield: 3 dozen cookies
1/2 | cup | shortening | |

1/2 | cup | granulated sugar | |

1/2 | cup | brown sugar (packed) | |

1 | egg | ||

|||
1/2 | teaspoon | vanilla | |
|
|||
1 | cup | all-purpose flour* | |
|
|||
1/2 | teaspoon | soda | |
|
|||
1/4 | teaspoon | baking powder | |
|
|||
1/4 | teaspoon | salt | |
|
|||
1 | cup | quick-cooking oats | |
|
|||
1 | cup | fortified whole wheat flakes cereal | |
|
|||
1/2 | cup | shredded coconut | |
|
Heat oven to 375 F. Mix thoroughly shortening, granulated sugar, brown sugar, egg and vanilla. Stir in remaining ingredients. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheet. Bake 10 minutes. Immediately remove from baking sheet.
*If using self-rising flour, omit soda, baking powder and salt.
